Love Christmas cake but steering clear of refined sugar and flours? Look no further...
This Christmas cake tastes just like the traditional ones, minus the sugar, flour and brandy (though you’re welcome to add that to this recipe!)
It’s tastes awesome and it’s super easy to make. Dig in!
What you’ll need
120 g dried figs
120 g dried apricots
120 g currants
120 g sultanas
120 g pitted dates
1½ cups almond meal
½ cup chopped walnuts
zest and juice of 1 orange
zest of 1 lemon
2 tbsp ghee, butter or fat of your choice
1 tsp mixed spice
½ tsp cinnamon
½ tsp nutmeg
1 tsp vanilla
How to do it
Preheat your oven to 150 degrees celsius. Line a 20cm cake tin with baking paper.
Roughly chop the figs, apricots and dates and add to a large mixing bowl with the rest of the dried fruit. Add remaining dry ingredients, orange juice and zest and stir.
Whisk eggs and add to the mixture.
Warm ghee in a pot on the stove at a low heat until melted. Add to mixture.
Thoroughly combine mixture and pour into cake tin. Bake in the oven for about an hour and a half, or until a skewer comes out clean.
