Walnut, Cranberry + Coconut Slice

Let's be honest, I have a sweet tooth. I'm always experimenting with new and different treats, and this one is a winner! This slice is the perfect combination of flavours and textures. You can make it as sweet (or not sweet) as you like. It's makes a great afternoon treat or dessert and it freezes well (if it lasts that long).

walnut cranberry and coconut slice

Serves 12


2 cups sunflower seeds
1 cup walnuts
1 cup desiccated coconut
2 heaped tbsp coconut oil
1/2 cup dried, unsweetened cranberries
1/2 cup dates, soaked in boiling water
raw honey if desired


1. Blend sunflower seeds and half of walnuts in blender until a fine powder is formed. Remove nuts and seeds from blender.

2. Add dates to the blender with coconut oil and a couple of teaspoons of the date-soaked water. Blend until smooth. (If you can't get this mixture smooth, don't worry! As long as the dates are very finely chopped it will work)

3. Add all ingredients to a large mixing bowl and mix with a wooden spoon. Add honey if you'd prefer it sweeter.

4. Press mixture into a lined baking tin or tupperware container. Top with some desiccated coconut. Store in the fridge.
