I'm a sucker for dessert - and this raw cardamom caramel slice would have to be one of my all-time favourites! If you have any friends who are sceptical that real food can taste incredible, give them a slice of this and their mind will be changed forever. If you want to share, that is!
RAW CARDAMOM CARAMEL SLICE | GF, DF
TOTAL TIME: 20 MINUTES SERVES: 12
- 2 cups desiccated coconut
- 1 tablespoon raw cacao powder
- 8 medjool dates
- 2 tbsp coconut oil
- 10 medjool dates
- 1 cup cashews
- 2 tbsp coconut cream
- 2 drops YL Cardamom Essential Oil (optional)
- 6 tbsp raw cacao powder
- 4 tbsp coconut oil or cacao butter (melted)
- 1 tbsp raw honey
Line a square 20cm lunch box with baking paper.
Place the base ingredients into your blender and blend until a crumb-like texture is formed. Press the mixture firmly into your prepared lunch box.
Place the filling ingredients into your processor and blend until smooth. Evenly spread the mixture over your base and smooth over with a spatula.
Stir the topping ingredients in a mixing bowl until well combined. Pour over the base. Smooth over with a spatula if required. Place the slice into the fridge or freezer to set.
Slice into 1-inch chunks and enjoy!
