Satay sauce is so delicious! But while peanuts and peanut butter may be ok in moderation, they aren't the healthiest choice. There are a few reasons for this, including the susceptibility of peanuts to aflatoxins (a toxic fungus), along with a few other factors which you can read about here.
This recipe uses cashew nuts instead, which are a healthier option, and taste just as good, if not better!
This satay sauce recipe is incredibly quick and easy. It makes a great dipping sauce for meat or veggie skewers, and is an awesome addition to a stir fry or curry.
