Corn fritters are my favourite thing to order when I'm out to breakfast at a cafe. But it's so easy to make cafe-quality corn fritters at home!
1 ear of corn
2 heaped tbsp almond meal
1 spring onion, finely chopped
3 tsp butter or ghee
salt + pepper
Add half of corn kernels to the blender with eggs and almond meal and blend until smooth. Add remaining corn kernels and spring onion to the mixture and stir.
Set a pan on your stovetop to medium heat. Add butter or ghee to the pan, using 1 tsp per corn fritter (should yield 3 fritters). Cook each side thoroughly until golden brown, and then flip and cook other side.
Serve with avo, baby spinach and smoked salmon!
